Daye Bensa is a washing station in Sidama that was founded by Asefa Dukamo and Mulu Geta Dukamo. In total they own 16 washing stations and 4 dry mills. They collect cherries from local farmers and process them under various preparations. This is our first honey processed offering from Ethiopia! It is juicy and dynamic in a way that we hadn’t experienced before, boasting lots of dried fruit flavors (think mango and papaya) as well as fresh stonefruit and pom flavors like black cherry and cooked pear. The cup is cleaner than we expected, which we find leaves us wanting another cup each time we finish one. For filter coffee preparation, we prefer this coffee at a 1:15 ratio (our preferred method for this coffee has been flat bottom paper filters such as Origami) and we target a 2:45-3:00 brew time. For espresso preparation, we have been using a 1:1.8 ratio, targeting slightly smaller shots than we would typically pull in our cafes, which we find brings more of the cherry blossom aromatics forward.
